In our second ‘recipe of the month’, our onboarding team leader Mike shares his favourite meal, a hearty three bean stew which will definitely keep you going until spring finally comes!
Three Bean Stew
Ingredients:
- 1 x leek sliced
 - 2 x carrots sliced
 - 2 x medium onions diced
 - 2 x peppers (red and yellow) roughly chopped
 - 3 x cloves of garlic chopped
 - 1 x chilli chopped and deseeded
 - a handful of green beans
 - 1 x 400g tin of chopped tomatoes
 - 1 x 400g tin of butter beans
 - 1 x 400g tin of kidney beans
 - a couple of handfuls of spinach (optional)
 - olive oil
 - salt
 
Instructions:
- Fry the onions in the oil on a medium heat in a large pan until they’re browned
 - Add the chilli and garlic and fry for a couple more minutes
 - Add the rest of the veg and cook until softened (around 10 minutes)
 - Pour in the tomatoes and (drained) beans and simmer on a low heat for a further 30 minutes
 - Season with salt and if you want to add a bit of colour stir in some spinach right at the end
 - Serve alone or with rice (remember one cup of rice to two cups of water when boiling!) and a spoonful of Greek yoghurt
